Free Holiday Sourdough Baking Schedule
Sourdough for Thanksgiving or Christmas dinner, planned backward from the time you eat. One page per holiday plus a bake-ahead-and-freeze plan, on US Letter with Planned and Actual columns.
What's inside, page by page
- Thanksgiving (Thursday, November 26, 2026)Worked back from a 4:00 pm dinner. Plan A bakes Thanksgiving morning, with the oven free before the main dish goes in. Plan B bakes Wednesday and refreshes the crust before dinner. An "Hours before dinner" column lets you shift every step to your own dinner time.
- Christmas (Friday, December 25, 2026)Worked back from a 2:00 pm dinner. Plan A bakes Christmas morning after an overnight cold proof. Plan B bakes on Christmas Eve. Includes a fill-in box for your recipe in grams and baker's percentages.
- Bake ahead and freezeBake on a quiet weekend, wrap, freeze, then thaw and refresh on the day, with a note on make-ahead dinner rolls and an oven plan for the day itself. The sources are on this page.
How it was put together
The timings are compiled from published sources and credited on the PDF: The Perfect Loaf's beginner sourdough method (bulk and cold-proof times, doneness temperature), King Arthur Baking's sourdough scheduling, bread-freezing and make-ahead dinner roll articles, and the feeding ratios from our weekend baking schedule. We did not test-bake these timelines. Your kitchen, flour and starter will differ, so watch the dough, not the clock, and use the Actual column to note what really happened.
How the signup works

No email? The free weekend schedule and starter log needs no signup, and the overnight vs same-day guide explains how to move a bake around your day. Scale your holiday loaf with the hydration calculator.
